「今、コーヒー豆屋を準備中なので、出来るだけ早く
焙煎教室を受講したい。一番早く受けられるのは何日ですか?」

中島：「明日でもいいですよ」

この電話がかかって来たのが火曜日。
そして、水曜日に焙煎教室を行いました。

しかし、今迄でいちばん難しい焙煎教室になりました。
なぜなら・・・・・・

「このノウハウを業務用１キロ釜で生かすには、
どうしたらいいですか」

・・・・・・、焙煎機を改造しないと無理です。

焙煎のメカニズムから言って、豆への火の入り方が対極的になるので
このノウハウはそのまま使えません。

メーカーでオプション塗装を頼んでください。

ですが、オプションで＊＊＊＊＊＊＊をしたとしても、
＊＊があるので＊＊の＊＊＊＊に対応した焼き方を
覚えるのには、３年４年はかかります。

焙煎の釜を含めて、全ての条件を同じにした場合、
12年分のプロの技が１日で手に入りますが、
違う条件では何年も修行しなければなりません。

ですが、来て頂いた以上、最善の策を提案しますので
いろんなシナリオを考えて見て下さい。

１、現状の１キロ釜を改造する。
そして何年もデータを取りながら修行する

２、釜の改造費用がハンドロースターを
買う金額と同等ならロースターを購入し、
釜と併用。資金を作り、焙煎釜を改造する

と、いう２つのシナリオを提案しました。

せっかく焙煎ノウハウを手に入れても、
使えないのは実にもったいない事です。

しかも、たった１日で習得出来るプロの技を
何年も修行しなければならない方法で実践とは・・・・。。。

中島流焙煎教室は、最終的に「どんな結果が最適解か」を
受講者と一緒に考えますから、ノウハウ教えて「はい終わり」
なんてことは絶対にありません。

今回は、焙煎教室を少し違う角度から考える事が出来ました。
