居抜きの喫茶店でカフェオープンを考えていました。

本日焙煎教室

今日の受講者は、上記の事を話してくれましたが
コーヒーが流行っているから、カフェ!

建物が喫茶店の居抜きだから、カフェで開業できるだろう
なんて考えていたら、3年以内には姿を消すことになります。

「一度潰れたところは、何をやってもダメだわねー」

と、20年前に近所のおばちゃんたちが、話しているのを
聞いたことがあります。

消費者・お客の目線からは、店がコロコロ変わる立地は
栄転だろうが廃業だろうが「潰れた」としか見てくれません。

しかし、立地の事は横に置いといたとしても、
カフェで勝負をしようとしたら、先ずは利益構造を
知らなければ、売れているのに廃業という道もあります。
